How to control vitalizer boiling ?
Thanks to chefs who've placed their trust in us and to bloggers we've encountered in recent years, our recommendations for using the Vitalizer has been enhanced with their precious advice.
As you will see, it isn't necessary to bring water to a rolling boil for some products.
Foodstuffs which require active boiling
- Potatoes, carrots, leeks, broccoli, peas, cabbages in general, beetroot, parsnip, all root vegetables, fennel, artichokes, pears, bananas
- Tournedos-cut beef fillet (2 minutes cooking), lamb and pork
Foodstuffs which require moderate boiling
- Courgettes cut in round slices, all leaf vegetables such as spinach, chard leaves, sorrel leaves, etc.
- Chicken fillets, fish, shellfish
-Veal liver and poultry livers
If you are lucky enough to find raw shrimps, you just need to simmer them for less than 5 minutes.
- Delicate fruit such as red berries, apples
- Baked eggs as well as all ramekin cooking
Foodstuffs which just required short boiling and which should then remain in the Vitalizer with the heat turned off.
- If you enjoy fish and shellfish, I suggest you do as follows: place your cod fillet for example in the sieve of the Vitalizer which is boiling. Cover and leave to cook for 1 to 2 minutes maximum. Then leave the fish to sit in the Vitalizer with the heat turned off for 5 to 10 minutes, depending on its thickness. Its flesh will be delicate and silky. Salmon excels in this type of cooking.
Scallops should be placed in the sieve of the Vitalizer which is boiling, then turn off the heat immediately; 1 to 2 minutes will do the trick. Some people prefer fish well-cooked; in this case leave boiling for a little longer for these guests.
- If you cook duck fillets, I suggest you boil them for 3 minutes, then leave them in the Vitalizer with the heat turned off for 7 to 8 minutes. The meat will cook by diffusion and will tenderize. You can serve the fillets on a plate, cut in fine slices, drizzled with the sauce of your choice.
